This Valentine's Day we teamed up with The Margarita Mum, one of our favourite Aussie cocktail creators, to create our annual BABY Pink Gin Valentine's Day cocktail recipe. 

Needless to day, it's DELISH. Treat your Valentine, Galentine, or yourself!

Start by creating a very simple syrup:

¼ Cup Sugar

2 figs, slice in half

A few chunks of frozen pink grapefruit (I find it Woolworths)

1 Cup Water

Place all ingredients in saucepan and bring to the boil. Reduce to a simmer until liquid approximately halves. Refridgerate and cook before use.

For the Drink I used:

60ml Baby Pink Gin

30ml Dragonfruit and Fig Syrup

30ml Fresh Lime Juice

120ml Tonic

Place all ingredients in a cocktail jug and stir gently until combined.

Fill your glass with ice and serve with more fruit of the gods, edible flowers and fresh thyme.
